Cranberry & White Chocolate Cookies
These are a favorite in my house. Soft, chewy and loaded with goodies. Sweet, white chocolate and kind-of-tart cranberries with a little crunch from the nuts make them perfect for snacking on with a cup of milk or a hot, steaming cup of tea. Have them ready warm out of the oven when your kids get home from school or come in from playing outside in the cold. They make a perfect after-school snack. I usually make them with walnuts but they would be just as good with other nuts. Whatever you have on hand will work fine. I’m not sure where the recipe came from. I have it written down on an old scrap of paper. Sometimes those are the best recipes!
Cranberry & White Chocolate Cookies
1 cup sugar
1 cup packed brown sugar
½ cup butter
¼ cup milk
2 tablespoons lemon juice
1 teaspoon vanilla
2 eggs
3 cups flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup dried cranberries
1 cup white chocolate chips
1 cup nuts
1. Preheat oven to 375 degrees. Beat butter and sugars together until fluffy.
2. Add milk, lemon juice, vanilla and egg. Blend well.
3. Add rest of ingredients except cranberries, chips and nuts.
4. Stir in cranberries, white chocolate chips, and nuts.
5. Drop by rounded teaspoonful on ungreased cookie sheet and bake for 8-12 minutes until light brown on edges.
I bet these would go great with coffee too! I love cranberry and white chocolate. Yumm.
